Spiced Carrot Cake Loaf 🍞

With winter en route, we're seeking comfort foods. 

There's a lot to love about this cake, which uses dark brown sugar and maple syrup instead of refined sugar, and *good fats* from coconut oil, Greek yogurt, and walnuts. Not familiar with spelt flour? It's an ancient wheat grain that is higher in protein and zinc, and slightly lower in gluten than traditional wheat.

The blend of cinnamon, ginger, and nutmeg are ultra-warming and seasonally appropriate, plus, all that carrot adds fibre, vitamin K, beta-carotene, potassium, and vitamin B6 ✨ 

This weekend, we're spending Sunday decorating our homes for Christmas and snacking on this deliciously spiced carrot cake loaf with She & Him songs on repeat.


  • 1 large egg

  • ½ cup dark brown sugar

  • ¼ cup maple syrup

  • ‎⅓ cup melted coconut oil

  • ¼ cup Greek yogurt

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • ½ tsp ground nutmeg

  • pinch of sea salt

  • 1 cup spelt flour

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ cup chopped walnuts + a few extra to sprinkle on top ✨

  • 2 cups grated carrots


  1. Pre-heat oven to 350° F. Brush loaf pan with any vegetable oil (we used grape-seed) + line with parchment.

  2. In a large bowl, whisk egg, brown sugar, melted coconut oil, maple syrup, Greek yogurt, ginger, cinnamon, nutmeg, and sea salt.

  3. Add spelt flour, baking powder, and baking soda. Fold to combine, then fold in walnuts and carrots. Be careful not to over-mix!

  4. Pour the batter into your pan and smooth the top. If you like, sprinkle some chopped walnuts on top, too!

  5. Bake for about 50 minutes, until a toothpick inserted in the centre comes out clean.

  6. Let cool in the pan for at least 15 minutes, then turn out onto a wire rack or serving plate. 

  7. Serve sliced with a knob of grass-fed butter or room-temp. coconut oil.

This cake is super dense and moist but crumbly. Serve it with black coffee, green tea, or a glass of your fave milk. Store it covered on the counter for up to 2 days or in the fridge for up to 4 days (if it lasts that long 😇)
